Day 27: Fruit Salad

Friday tends to be my busiest day in the week. Meetings at work and meetings with friends and dinner. But the latter is always the best part of the day. Especially since this past Friday, I got to have Korean lunch at Hanjan with a dear friend I hadn’t seen in almost 3 years. So much catching up to do that we didn’t realize an hour had passed.

Since lunch was a heavy bibambap meal, dinner was simple and salad had to be simpler. I needed to make sure I ate all my fruits before they went back and tossed the fruit in with some honey. If the fig is old, it’s best to peel off the skin since it does get tart.

Ingredients

  • 2 figs, sliced
  • 1 nectarine, sliced
  • 1/2 cup of blueberries
  • 1 tbsp honey

1. Mix all the fruit and honey. Let it set for 15 minutes. And serve fresh.
