Fire Roasted Vegetables

Living so close to Costco has been amazing and difficult. Amazing that food is so available but difficult with what I want but can’t/shouldn’t have. The task with living in New York is carting everything back and finding places to store them. How does one bring it back? I’ve yet to use what I call the “grandma cart” to haul everything back so items must be purchased sensibly.

Recently, I found these amazing Fire Roasted Vegetables with balsamic butter and it’s been amazing! I’ve cooked it with tilapia, calamari, and mussels. Even eating it alone has been great!

I needed a little more substanance and found Ronzoni had some healthy pasta. 1/6 of the box of angel hair only yields 170 calories but is still filling with all the veggies and meat.

Ingredients:

  • 1 cup of Fire Roasted Vegetables (balsamic butter)
  • 5-6 shrimp, deveined and grilled
  • 1/6 Ronzoni Smart Taste Angel Hair
  • PAM

There are 3 bags in it. 1 cup is only 120 calories.

Make the angel hair first and set aside. Grill the shrimp (use PAM to save some calories) and set aside. On medium heat, cook the veggies and when it’s almost done, add the angel hair. Mix well. Turn off the heat and add the shrimp. Easy and quick. If you have fresh parsley, just toss it on.

Shrimp and angel hair with veggies came out to about 320ish calories.

Mussels were steamed with a bit of salt. It’s good and filling and super yummy. You can always try with other meat.
