Mint Lemongrass Shrimp Soup

My mother used to make me this mint shrimp lemongrass soup when I was younger so I would stay hydrated. It’s not fattening and the soup is simple enough to make.

Ingredients

  • splatter of rice grain
  • 3 cups of water
  • 2 inch stalk of lemongrass
  • quarter size galangal
  • 2 kaffir leaves
  • .5 tsp of salt
  • 10 shrimps
  • handful of chopped mint

ingredients

  1. In a medium size pot, turn heat on high and and boil water with rice. Add lemongrass, galangal and kaffir leaves. Cook for 10 minutes.

  2. Peel and devein shrimp.

  3. Add salt and taste. Add shrimp and cook until it turns pink.
  4. When it’s read to serve, add mint leaves. Serve with a cup of cooked jasmine rice.

This is great when you’re sick and just need something healthy to eat. You can add mushrooms and a variety of Asian greens like bok choy or chinese broccoli to get more protein.
