After the Berry Citrus salad yesterday, which was really good and I only a few mouthful, I really wanted to have another sweet salad.
I had some pork loins as well and I remembered the pork pairs very well with sweet dressing. So I marinated overnight 2 slices of pork loin with oyster sauce, honey, and a dash of soy sauce. You can bake at 400F for 15-20 minutes or if you want to get it done quicker, just throw it on the stove and pan fry with a light olive oil spray.
As for the salad, since I was still on the berry kick, I dug into the last batch of blackberries and strawberries. The strawberries were not looking well so I was glad I could turn them into a pink dressing, easily hiding the bruises.
Ingredients for Salad
- 2 cups kale
- 1 cup blackberries
- 1/4 cup pistachios, chopped

1. Mix all ingredient and pour dressing over. Remember that kale requires a lot of massaging beforehand. So not to waste the dressing, massage kale well before adding the dressing.
2. Serve with honey oyster sauce pork loins.
I thought it wasn’t the best combination. They each stood alone very well. Both very strong taste. My boyfriend argued that they tasted better together. So we are at odds about that. But I’m glad I tried it out.
