Yay, it’s Friday!
Normally, at work, there’s free lunch but by the time I get up to go check it out, it’s demolished. So I went prepared with a super simple salad that could be eaten cold, won’t be soggy, and wouldn’t make the office smell like a Prahok kitchen. I rather like the smell of prahok.
Kale rarely ever softens even after I stir fry it for awhile. It loves to be crispy more than soft. I added garlic and onion for sweet and pungent taste.
Ingredients for Salad
- 1 cups kale
- 1/2 cup cooked quinoa
- 1/4 sweet onion, chopped
- 1 clove garlic, minced
- 1/2 tsp soy sauce
- 1/2 tsp olive oil
- salt, for taste
1. Heat on medium fire, olive oil. Add garlic and roast until golden.
2. Add kale and stir until softened. Set aside.
3. Heat a little more olive oil and add onion. Cook until golden.
4. Add kale and quinoa, mix with salt and soy sauce.
5. Serve or save for later.
I had some leftover larb gai (spicy lime ground chicken) and added that to the mix. Not a bad mix. Sweet, spicy, and sour. The quinoa acted like a good grain texture.
