My mother used to make me this mint shrimp lemongrass soup when I was younger so I would stay hydrated. It’s not fattening and the soup is simple enough to make.
Ingredients
- splatter of rice grain
- 3 cups of water
- 2 inch stalk of lemongrass
- quarter size galangal
- 2 kaffir leaves
- .5 tsp of salt
- 10 shrimps
- handful of chopped mint
- In a medium size pot, turn heat on high and and boil water with rice. Add lemongrass, galangal and kaffir leaves. Cook for 10 minutes.
- Peel and devein shrimp.
- Add salt and taste. Add shrimp and cook until it turns pink.
- When it’s read to serve, add mint leaves. Serve with a cup of cooked jasmine rice.
This is great when you’re sick and just need something healthy to eat. You can add mushrooms and a variety of Asian greens like bok choy or chinese broccoli to get more protein.
