Wild Berry Custard

Custard is one of those things I use for cakes, cream puffs, and all sorts of sweet dippings. It’s definitely one of my favorite but I rarely ever make it. Recently, I’ve been watching a lot of CreateTV shows and one of my favorites have been Fast Cooking with Jacques Pepin. One of his dessert was a berry custard which sounded so easy to make. I’ve modified it a little and it is still pretty good.

Ingredients:

  • 1 cup soy milk
  • 1 tsp of vanilla
  • 2 egg yolk
  • 2 tbsp of flour
  • 3 tbsp of sugar
  • handful of strawberries and berries
  • a few store bought cookies.


The yolk was separated early in the morning for when I was making waffles for breakfast so I had it readily available.

Step 1: Heat milk with vanilla.

Step 2: Whip egg yolk with sugar. Add flour and beat well.

Step 3: When the milk is starting to boil, add to egg yolk and beat until it thickens. Pour back into pot and continue to boil until it thickens in consistency.

Step 4: Serve in bowl with fruits and cookies.
